East Meets West SPAM® Rolls
State Fair Winning Recipe

Ingredients

  • 1 package egg roll wrappers
  • 1/4 cup thousand island dressing
  • 2 cups sauerkraut, drained and pressed
  • 2 cups Gruyere cheese, shredded
  • 5 cups peanut oil, for frying
  • 1/4 cup water, sealing egg rolls
  • 1 can (12oz) SPAM® Less Sodium, diced

Directions

  1. Place water in a small dipping bowl or cup
  2. To wrap SPAM™ Rolls: Looking at your egg roll wrapper, you will have a left and a right side, as well as a top and bottom
  3. Place a heaping teaspoon of thousand island dressing in the center of the wrapper, leaving about one inch on each side
  4. Spread 1 tablespoon kraut on top of the SPAM® Less Sodium
  5. Sprinkle 1 tablespoon Gruyere cheese in top of the kraut
  6. Finish by spreading another tablespoon of the diced SPAM® Less Sodium across the top
  7. Using your fingertip, dip it in the water and spread the water evenly along the edges
  8. This will help seal the SPAM™ roll
  9. Fold the left side over about 1/2 inch so that it overlaps
  10. Repeat with the right side
  11. Bring the bottom up over the filling and roll up until you have the egg roll shape
  12. Run your finger across the seam to make sure it is sealed
  13. Turn over with seam side down and press firmly on the left and right side making sure the SPAM™ roll is well sealed
  14. Heat oil to 375 degrees in a deep, heavy skillet
  15. Place about 4 egg rolls at a time
  16. Turn them about every minute until golden brown on all sides
  17. Frying for approximately 2 to 3 minutes of total cooking time
  18. Remove from oil and place on a wire rack that has been placed on top of a sheet pan
  19. Allow to drain
  20. Yields: 14 to 16
  21. Serve warm with spicy brown or sweet hot mustard if desired
