Barbecue SPAM Muffins

Ingredients

  • 1 (12-ounce) can SPAM® Classic, grated
  • 1/3 cup finely chopped onion
  • 1/3 cup ketchup
  • 2 tablespoons packed brown sugar
  • 1/2 teaspoon chili powder
  • 2 teaspoons cider vinegar
  • 1 cup finely shredded mozzarella cheese
  • 2 (8-count) cans refrigerated large buttermilk biscuit dough

Directions

  1. Heat oven to 375°F.
  2. Lightly grease 48 miniature muffin cups. Divide each biscuit into thirds; press into bottom and up sides of muffin cups.
  3. In large skillet, combine SPAM® Classic and onion; sauté until onion is softened and SPAM® is lightly browned. Add ketchup, brown sugar, chili powder and vinegar; mix well.
  4. Divide SPAM® mixture evenly among muffin cups. Top each with cheese. Bake 18 minutes or until biscuits are golden brown.
