Cheesy Macaroni Bake

Ingredients

  • 8 ounces elbow macaroni
  • 1 (12-ounce) can SPAM® Classic, diced
  • 2 tablespoons butter or margarine, divided
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon dry mustard
  • 1 pinch ground red pepper (cayenne)
  • 2 cups milk
  • 1/2 pound processed sharp American cheese, diced
  • 1/2 ( ) cup fresh bread crumbs (1 slice)
  • 1/8 teaspoon paprika

Directions

  1. Cook macaroni according to package directions; drain.
  2. In casserole, stir together SPAM® Classic and macaroni.
  3. In medium saucepan, melt 1 tablespoon butter. Blend in flour, salt, mustard, black pepper and cayenne until smooth. Stir in milk; cook over medium heat, stirring, until mixture thickens and boils. Add cheese; cook, stirring, until cheese is melted. Pour over SPAM® mixture; mix well.
  4. In microwave-safe bowl, melt remaining 1 tablespoon butter; stir in bread crumbs and paprika. Sprinkle over macaroni. Bake 20 to 25 minutes.
  5. Heat oven to 400°F. Lightly grease 2-quart casserole.

Notes

  1. Microwave Directions:
    Cook macaroni according to package directions. In 4-cup measuring glass, stir together flour, salt, mustard, black pepper and cayenne; slowly mix in milk until smooth. Add 1 tablespoon butter and the cheese; mix well. Microwave on HIGH (100%) 4 minutes. Stir until smooth; microwave on HIGH 3 minutes longer. Beat until smooth.

    In casserole, combine SPAM® and macaroni; mix sauce into macaroni. In 2-cup measuring glass, mix remaining 1 tablespoon butter, the bread crumbs and paprika. Microwave on HIGH 1 minute. Microwave macaroni mixture on HIGH 3 minutes. Stir; sprinkle with crumb mixture. Microwave on HIGH 2 minutes longer. Cover; let stand 3 minutes.
