Mini SPAM® Nacho Burgers

Ingredients

  • 3 tablespoons red wine vinegar
  • 2 teaspoons honey
  • 2 teaspoons chipotle chili in adobo sauce, minced, canned
  • 3 plum tomatoes, seeded and diced
  • 3 tablespoons red onion, diced
  • 1 can SPAM® Classic, cut into 12 squares
  • 12 slices cheddar cheese, cut into small squares
  • 1 package (12oz) Hawaiin sweet rolls, lightly toasted
  • 1 cup guacamole, prepared
  • 6 red pickled sliced jalapeño peppers, cut in half

Directions

  1. In medium bowl, stir together the salsa ingredients; set aside.
  2. Slice SPAM® Classic into six 1/2 inch thick slices.
  3. Cut each slice in half (you will have 12 squares).
  4. Lightly grill or fry SPAM® Classic squares until lightly browned on both sides.
  5. Place on slice of cheese on each piece of SPAM® Classic.
  6. Let cheese begin to melt.
  7. Place grilled SPAM® Classic on toasted roll bottoms.
  8. Top each burger with guacamole, tomato-chipotle salsa and a piece of jalapeño pepper.
